To make aamras, soak all the mangoes in enough water in a deep bowl for 30 minutes. Take a mango, press from evenly from all the sides till it turns soft uniformly. Here is a simple but effective way of making Alphonso aamras, which can be served fresh or stored for one year in an airtight container in the freezer. Tips for aamras. 1. Remember to use well-ripened and sweet Alphonso mangoes, so there will be no need to add sugar. 2. When you remove the eye, peel off a slightly big piece so there is enough space to squeeze the mango pulp. 3. Instead of a mixer jar, you can also use a hand blender.

How to choose perfect mango for aamras

 

    1. Always pick mangoes with fibrous and firm skin. 
    2. Ensure that there are no blemishes or black spots on the skin. 
    3. A ripe mango gives off a sweet smell even when it is unpeeled. Never select an overly-ripe mango. 
    4. Always select fuller and rounder mangoes, which usually have a deep colour. 
    5. Check the area round the stem – if it is plump and round, it indicates that the mango is ripe. If it is blackened, it means the mango has started decaying. 
How to make aamras with mango pulp

    2. Then soak the mangoes without peeling them in a deep bowl with enough water. Soak them for 30 minutes. This is to reduce the heat of mangoes, since they are usually stored in a carton with dry grass for ripening.

    4. Remove the eye of the mango using a knife and discard it. Ensure you peel a slightly big piece so there is enough space to squeeze the mango pulp.

How to make aamras with chopped mangoes

    2. Then soak the mangoes without peeling them in a deep bowl with enough water. Soak them for 30 minutes. This is to make them cool, since they are stored in a carton with dry grass for ripening. 
    3. Peel the mango using a sharp knife, give vertical cuts and then horizontal cuts and finally run the knife just close to the seed or the pith, to get chopped mangoes. You can chop them roughly into big pieces. 
    4. Finally the remaining mango with the seed can be dipped in a bowl of water or milk and rubbed with fingers. When the entire mango fruit has been removed, discard the seed. 
    5. Transfer the chopped mango in a mixer jar and blend the mango pulp till smooth. Add 1 to 2 tbsp of milk or water to thin down the consistency if required.
