Notes on Gujarati dal recipe. 1. If you prefer a thinner consistency dal then add water accordingly. 2. Add the jaggery, mix well and simmer for 10 to 12 minutes, while stirring occasionally. It provides the necessary sweetness to the Gujarati dal. Also, you can add kharek which also provides a pleasant sweetness.

for Gujarati dal

  1. To make Gujarati dal, wash the dal, add 2 cups of water and pressure cook for 3 whistles.
  2. Allow the steam to escape before opening the lid.
  3. Mix well and cool slightly, add ½ cup of water and blend using a hand blender to a smooth mixture. Keep aside.
  4. Heat the ghee and oil in a deep pan and add the mustard seeds and cumin seeds.
  5. When the seeds crackle, add the fenugreek seeds, curry leaves, cloves, cinnamon, bayleaf, chillies, green chillies, ginger and asafoetida, mix well and sauté on a medium flame for few seconds.
  6. Add the tomatoes , mix well and sauté on a medium flame for 2-3 minutes.
  7. Add turmeric powder, chilli powder, coriander-cumin seeds powder, mix well and sauté on a medium flame for few seconds.
  8. Add the dal, salt and 1½ cups of water, mix well and cook on a medium flame for 7-8 minutes, while stirring occasionally.
  9. Add the yam, peanuts, jaggery, kokum, 1/2 cup of water, mix well and simmer for 10 to 12 minutes, while stirring occasionally.
  10. Add the coriander and mix well.
  11. Serve the Gujarati dal hot garnished with coriander.

This is an excellent and rich recipe.My mom always used to make this dal and everyone used to relish but since the time I left my mom's place and came to my hubby's place, I did not have this recipe then one fine day when I surfed your site I got the recipe of this dal and prepared it and it was so delicious that everyone enjoyed it so much that they did not leave their fingers too from licking.I saw my mom in Tarlaji this time.Thank u Tarlaji!

I have checked this recipe, I have a small doubt. You mentioned Kharek/dates in your ingredients list but you haven''t used it while demonstrating. Will you please let me know, as when to add kharek, or we can avoid it?
