  1. To make aloo baingan masala, heat oil in a pressure cooker, add the cinnamon, bayleaf and cumin seeds, saute for a few seconds.
  2. Add onions and saute on medium flame for 2 minutes. Add ginger-garlic paste and saute for a minute.
  3. Add tomatoes and cook on medium flame for 2 minutes.
  4. Add the tomato pulp, turmeric powder, chilli powder, coriander cumin seeds powder and kanda lasun masala.
  5. Mix well and cook on medium flame for 2 minutes, while stirring occasionally.
  6. Add potato cubes, brinjal cubes, salt to taste, 3/4 cup hot water, coriander and mix well.
  7. Cover with a lid and pressure cook for 2 whistles.
  8. Allow the steam to escape and then open the lid.
  9. Serve aloo baingan masala hot with roti or rice of your choice.

  6. Sauté for a few seconds.
  7. Add ½ cup thinly sliced onions.
  8. Sauté on medium flame for 2 minutes.
  9. Add ½ tbsp ginger-garlic (adrak-lehsun) paste.
  10. Sauté for a minute.
  11. Add ¼ cup chopped tomatoes.
  12. Cook on medium flame for 2 minutes.
  13. Add ½ cup tomato pulp.
  14. Add ½ tsp turmeric powder (haldi)
  15. Add 1 tsp chilli powder.
  16. Add 1 tsp coriander-cumin seeds (dhania-jeera) powder
  17. Add ½ tbsp kanda lasun masala.
  18. Mix well and cook on medium flame for 2 minutes, while stirring occasionally.
  19. Add 1 cup potato cubes.
  20. Add 2 cups brinjal (baingan / eggplant) cubes.
  21.  Add salt to taste.
  22. Mix well.
  23. Add 3/4 cup hot water.
  24. Add 1 tbsp finely chopped coriander (dhania).
  25. Cover with a lid and pressure cook for 2 whistles.
  26. Allow the steam to escape and then open the lid.
  27. Serve aloo baingan masala hot with roti or rice of your choice.
