Pineapple Jelly Cake recipe - How to make Pineapple Jelly Cake

Preparation Time:    Cooking Time:    Total Time:     Makes 2 serving

1/2 cup pineapple jelly crystals
1 cup crushed canned pineapple
1/4 cup sugar
1 tbsp lemon juice
1/8 tbsp salt
3/4 cup whipped cream
6 slices sponge cake
  1. Soak jelly crystals in 1/4 cup cold water, place over a bowl of hot water and stir until dissolved.
  2. Add the crushed pineapple, sugar, salt and lemon juice, mix well and cook on a slow flame until everything is well-blended.
  3. Remove from the flame, cool and add the whipped cream and fold gently.
  4. Line the sides and bottom of the pan with sponge cake and pour the mixture on the sponge cake.
  5. Refrigerate till set.
  6. Unmould and serve.
