This is a sumptuous salad, which is almost a meal in a bowl! Cooked macaroni is tossed with crunchy and spicy veggies like onions and capsicum, not to forget a dash of celery for a zesty flavour.

White sauce gives the Macaroni Salad a luscious texture, while curd adds a welcome tanginess to it. Serving the salad on a bed of juicy lettuce leaves improves the visual appeal, as well as the texture and flavour of this yummy salad.

This wholesome salad when accompained with Garlic Bread and a hot bowl of soup , it makes an easy dinner.

  1. Combine all the ingredients, except the macaroni and lettuce in a deep bowl and mix well.
  2. Add the macaroni and toss well.
  3. Just before serving, put the lettuce on a serving plate, top it with the prepared salad.
  4. Serve immediately.

To make thick sauce for macaroni salad

  1. For making the Thick White Sauce, heat the butter in a broad non-stick pan.    
  2. Once the butter has melted, add the plain flour.    
  3. Cook on a slow flame for 1 to 2 minutes, while stirring continuously with the help of a whisk. This is called as a roux which acts a thickening agent for the Thick White Sauce. The frequent stirring helps in even cooking of the flour apart from preventing it from forming lumps.    
  4. Once you see the flour has become a little froth and golden in colour, reduce the flame to low and add the milk. Pour the milk with one hand and whisk using the other hand. If you are vegan or allergic to dairy products, then use almond milk.        
  5. Whisk well and cook on a medium flame for 3 to 4 minutes, or till the Thick White Sauce thickens, while stirring continuously. It is very important to mix continuously after you add the milk and whisk until the flour and milk have incorporated well. If not whisked well, you might get lumps in your Thick White Sauce.    
  6. Add the salt and pepper.    
  7. Mix well and cook on a medium flame for 1 more minute. You can even add little nutmeg powder to enhance the flavor of Thick White Sauce.

    At first i thought how would white sauce and curd taste together, but when i tried this recipe it turned out to be amazing. Just loved this recipe. The capsicum and onion add nice crunch to the soft cooked macaroni. Very quick recipe and delicious too.
