A quick and easy batter of semolina and curds fortified with colourful and crunchy veggies, yields mouth-watering appe that’ll appeal to young and old alike.

The Instant Rava Appe is a scrumptious South Indian snack, which can be enjoyed with breakfast or at tea-time.

It is super simple to make as there is no grinding or fermentation required. You can just make it on a whim any time you wish. You can add any other vegetables also to this appe as per your liking. Serve it with coconut chutney.

Ingredients
1/2 cup semolina (rava / sooji)
1/2 cup curd (dahi)
1/4 cup grated carrot
1/4 cup finely chopped capsicum
1/4 cup finely chopped onions
2 tbsp finely chopped coriander (dhania)
1 tsp green chilli paste
salt to taste
2 tsp oil
1/2 tsp mustard seeds ( rai / sarson)
1/4 tsp asafoetida (hing)
6-8 curry leaves (kadi patta)
4 tsp oil for greasing and cooking

    Method
  1. Combine the semolina and curds with approx. 5 tbsp of water and mix well using a whisk.
  2. Add the carrot, capsicum, onions, coriander, green chilli paste and salt and mix well. Keep aside.
  3. Heat the oil in a small non-stick pan, add the mustard seeds, asafoetida and curry leaves and sauté on a medium flame for 30 seconds.
  4. Add the tempering to the semolina-curd mixture and mix well.
  5. Heat the appe mould on a medium flame and grease it using ½ tsp of oil.
  6. Pour 1 tbsp of the batter into each mould.
  7. Cook using ½ tsp of oil till the lower surface becomes golden brown and then turn each appe upside down using a fork so as to cook them from the other side as well.
  8. Repeat steps 5 to 7 to make 21 more appes in 3 more batches.
  9. Serve immediately with coconut chutney.

To make Instant Rava appe

  1. Generally, appe (paniyaram) are made using leftover idli and dosa batter. This Quick Vegetable Appe recipe is something you can whip in no time for a jhatpat South-Indian breakfast.
  2. Instant rava appe are made in special equipment called the appe mould. You can check our wide collection of recipes using appe mould
  3. For the instant rava appe, take fine semolina in a deep bowl.
  4. Add curd to it. Curd not only provides a sour flavour but also, softens the semolina quickly.
  5. Using approximately 5 tbsp of water, mix well using a whisk. Ensure that no lumps remain.
  6. Now add a myriad of vegetables like grated carrot.
  7. Add finely chopped capsicum. You can also skip adding vegetables and make plain appe with the typical South-Indian tempering.
  8. Add finely chopped onions. They not only make the batter colorful and nutritious but, also provide a nice crunch to the appe on cooking.
  9. Finally, add coriander and green chilli paste.
  10. Now add salt to taste, mix well and keep aside. The best part about this batter is that it doesn't require any grinding or fermenting.
  11. Heat the oil in a small non-stick pan, add the mustard seeds.
  12. Once the seeds crackles, add the hing and curry leaves and sauté on a medium flame for 30 seconds.
  13. Add the tempering to the semolina-curd mixture and mix well. The batter should be of thick pouring consistency. Many people add baking soda or fruit salt to the batter. You can add if you wish to.
  14. Heat the appe mould on a medium flame and grease it using ½ tsp of oil. Some recipe followers ask if Instant Rava Appe can be made in idli stand? No, you cannot make it. 
  15. Pour 1 tbsp of the batter into each mould.
  16. Cook rava appe using ½ tsp of oil till the lower surface becomes golden brown.
  17. Turn each rava appe upside down using a fork so as to cook them from the other side as well. Make sure you cook them on a slow flame or else they will turn brown from the outside and stay uncooked from inside.
  18. Repeat steps 5 to 7 to make 21 more rava appes in 3 more batches.

Hi, I think this is a great recipe, I want to try this but I wonder if I could add some soda bicarbonate to make them a bit fluffy? Thanks
