Enjoy the goodness of different veggies along with coriander chutney and kids favorite ketchup . Vegetables and coriander are the stuff which kids try to avoid and find ways to skip them but I am sure kids will leave their tiffin empty when you give them this treat :)

Ingredients

For The Chutney
1 cup chopped coriander (dhania)
1 cup chopped mint leaves (phudina)
2 green chillies
11 tbsp chopped ginger (adrak)
1/4 cup besan (bengal gram flour)
2 tsp lemon juice
salt to taste

For The Stuffing
1 tbsp oil
1 tsp cumin seeds (jeera)
1/2 cup finely chopped spring onions
1/2 cup finely chopped carrots
1/2 cup finely chopped capsicum
1/2 cup finely chopped french beans
1/2 cup finely chopped potatoes
1/2 cup green peas
1/2 cup cauliflower florets
1 tsp garam masala
1 tsp dried mango powder (amchur)
1/4 tsp turmeric powder (haldi)
1 tsp chilli powder
1 1/2 tsp coriander-cumin seeds (dhania-jeera) powder
salt to taste

Other Ingredients
whole wheat bread slices
butter as required
tomato ketchup as required
Method

For the Chutney

    For the Chutney
  1. Combine all the ingredients and blend in a mixer adding enough water to a smooth paste.
  2. Keep aside.

For the Stuffing

  1. Heat the oil in a pan and add the cumin seeds.
  2. When the seeds crackle, add the spring onions and saute for 2 minutes.
  3. Add the remaining vegetables and salt and cook it till tender.
  4. Add the remaining ingredients and mix well.
  5. Remove form the flame and keep aside to cool.

How to proceed

    How to proceed
  1. Apply butter to the bread and then a coat of chutney and then add stuffing and cover it with another bread slice coated with butter and chutney.
  2. Toast it in a toaster or griller.
  3. Do apply little butter on top of the bread so that it turns out to be more golden and crisp.
  4. Serve hot with ketchup.
