Ingredients

For The Dough
1 1/2 cups whole wheat flour (gehun ka atta)
1 tsp oil
salt to taste

For The Cauliflower Greens Stuffing
1 1/2 cups chopped cauliflower greens
2 tsp oil
1/2 tsp cumin seeds (jeera)
1/2 cup finely chopped onions
1/2 tsp green chilli paste
1/2 tsp ginger (adrak) paste
salt to taste

Other Ingredients
whole wheat flour (gehun ka atta) for rolling
2 1/2 tsp oil for cooking
Method
For the dough

    For the dough
  1. Combine all the ingredients in a deep bowl and knead into a soft dough using enough water.

  1. Heat the oil in a broad non-stick pan and add the cumin seeds.
  2. When the cumin seeds crackle, add the onions and sauté on a medium flame for 2 minutes.
  3. Add the green chilies paste, ginger paste and sauté on a medium flame for 30 seconds.
  4. Add the cauliflower greens and salt and sauté on a medium flame for 5 minutes.
  5. Add 2 tbsp of water, mix well and cook on a medium flame for 1-2 minutes, while stirring occasionally. Mix well and keep aside.
  6. Divide the cauliflower stuffing into 5 equal portions. Keep aside.

  2. Roll out a portion of the dough into a 100 mm. (4") diameter circle using a little whole wheat flour for rolling.
  3. Place one portion of the cauliflower greens stuffing in the center of the circle.
  4. Bring together all the sides in the center and seal tightly.
  5. Roll out again into a circle of 150 mm. (6") in diameter using whole wheat flour for rolling.
  6. Heat a non-stick tava (griddle) and cook the paratha on a medium flame, using ½ tsp of oil, till golden brown spots appear on both the sides.
  7. Repeat steps 2 to 6 to make 4 more parathas.
  8. Serve hot.

  3. Knead this into a soft dough using enough water.

  4. Add the cauliflower greens and salt and sauté on a medium flame for 5 minutes. If you don’t have cauliflower greens then use methi leaves or spinach, the parathas will surely taste different and have a unique texture.
  5. Add 2 tbsp of water, mix well and cook on a medium flame for 1-2 minutes, while stirring occasionally. Mix well and keep aside. Water helps in softening and cooking of the leaves.
  6. Divide the cauliflower stuffing into 5 equal portions. Keep aside.

  4. Bring together all the sides in the center and seal tightly. Make sure you don’t over stuff the paratha or else it won’t seal together and ooze out while rolling.
  5. Roll out again into a circle of 150 mm. (6") in diameter using whole wheat flour for rolling.
  6. Heat a non-stick tava (griddle) and cook the paratha on a medium flame, using ½ tsp of oil, till golden brown spots appear on both the sides. You can even make use of ghee.
  7. When the base is 1/4th cooked, flip the paratha and apply ghee. Half-cook on the other side and flip again. Flip the parathas a couple of time and gently press them with a flat spoon to ensure even cooking.
  8. Repeat steps 2 to 6 to make 4 more parathas.
  9. Serve hot with healthy accompaniments like low-fat curd or cucumber raita.
