To make sabudana kheer, soak the sabudana and keep aside for 1 hour. Heat the milk in a deep non-stick pan and boil on a medium flame for 4 to 5 minutes. Add the soaked sabudana, mix well and cook on a medium flame for 12 minutes. Add the sugar, saffron and cardamom powder, mix well and cook on a medium flame for 2 minutes. Heat the ghee in a small non-stick pan, add the cashew nuts and raisins and sauté on a medium flame for 1 to 2 minutes. Pour it over the prepared sabudana kheer and mix well. Indian dessert for fasting is ready.

Tips for sabudana kheer. 1. Soak the sabudana in the measured amount of water given here. 2. While cooking the sabudana in milk, remember to keep stirring the mixture occasionally so it does not stick to the bottom of the pan. 3. Saute the cashew nuts and raisins on a slow or medium flame, else they will burn easily. 4. This kheer tastes yummy when served chilled. So refrigerate for at least an hour before serving.

Ingredients

For Sabudana Kheer
1/2 cup sago (sabudana)
4 cups full-fat milk
1/2 cup sugar
a pinch of saffron (kesar) strands
1/2 tsp cardamom (elaichi) powder
1 tbsp ghee
2 tbsp chopped cashew nut (kaju)
1 tbsp chopped raisins (kismis)

  1. To make sabudana kheer, combine the sabudana and ¾ cup of water in a deep bowl and keep aside for 1 hour.
  2. Heat the milk in a deep non-stick pan and boil on a medium flame for 4 to 5 minutes.
  3. Add the soaked sabudana, mix well and cook on a medium flame for 12 minutes, while stirring occasionally.
  4. Add the sugar, saffron and cardamom powder, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Switch off the flame and keep aside.
  5. Heat the ghee in a small non-stick pan, add the cashewnuts and raisins and sauté on a medium flame for 1 to 2 minutes.
  6. Pour it over the prepared sabudana kheer and mix well.
  7. Serve the sabudana kheer warm or chilled.

For sabudna kheer

  1. To make sabudana kheer recipe | how to make sabudana kheer | janmashtami vrat special recipe | Indian dessert for fasting, take 1/2 cup sago (sabudana) in a deep bowl and add ¾ cup of water in a deep bowl.
  2. Cover with a lid and keep aside for 1 hour for soaking. 
  3. Our soaked sabudana will look like this. You will notice the size of the sabudana pearl increases a bit, and also they feel softer than before. Soaked sago pearls even reduce the cooking time of our fasting special sabudana kheer
  4. To prepare janmashtami vrat special recipe, pour 4 cups full-fat milk in a deep non-stick pan and bring to boil. It would take approximately 4-5 minutes on a medium flame. Stir in between using a flat spatula, so the milk does not stick to the bottom of the pan. Traditionally, Indian mithai like kheer are made in a thick bottomed pan, but a non-stick pan works well. In case you are using an old non-stick pan or a stainless steel pan, just add 2 tbsp of water to form a protective layer between the pot and milk, which will prevent kheer from scorching. We have used regular milk but for a vegan variant make use of almond or coconut milk.
  5. Add the soaked sabudana.
  6. Mix well and cook on a medium flame for 12 minutes, while stirring occasionally. To check whether the kheer is ready, take out a few pearls of sabudana and press with the back of your spoon or simply between your thumb and index finger. It should not be hard or else it will be chewy. This indicates our sabudana are cooked.
  7. Add 1/2 cup sugar. You can add more or less as per the sweetness you prefer. 
  8. Add a pinch of saffron (kesar) strands. It provides a beautiful yellow hue to sabudane ki kheer and a rich flavor.
  9. Add 1/2 tsp cardamom (elaichi) powder to enhance the flavor of Indian dessert for fasting. 
  10. Mix well and cook on a medium flame for 2 minutes or until the sugar dissolves, while stirring occasionally. Switch off the flame and keep aside.
  11. For tempering, heat 1 tbsp ghee in a small non-stick pan.
  12. Add 2 tbsp chopped cashew nut (kaju).
  13. Add 1 tbsp chopped raisins (kismis). These give a nice mouthfeel to the recipe. 
  14. Sauté on a medium flame for 1 to 2 minutes or until they are golden brown. They will increase the richness and crunch of janmashtami vrat special recipe.
  15. Pour the fried dried-fruits over the prepared sabudana kheer.
  16. Mix well and our sago kheer is ready.
  17. Serve vrat special sabudana kheer warm or chilled. Sago pearls (sabudana) are pure starch so, they will absorb the milk as you chill it. You can add more milk and adjust the consistency before serving.
