Vegetable Stew ( Idlis and Dosas)

Idiyappam and Appam would be incomplete without a bowl of this mouth-watering Vegetable Stew. Easy to prepare, the stew is nothing but mixed vegetables in a gravy of coconut milk perked up with whole spices and green chillies.
While the coconut milk gives it a soothing flavour, the spices ensure a splash of excitement too. Cook the vegetables to just the right level, retaining their bright colours, as this will greatly enhance the visual appeal of the Vegetable Stew.
- Combine the cornflour and coconut milk in a deep bowl, mix well and keep aside.
- Heat the oil in a deep non-stick pan, add the cardamom, clove and cinnamon and sauté on a medium flame for 30 seconds.
- Add the green chillies and onions and sauté on a medium flame for 1 minute.
- Add the cornflour-coconut milk mixture, vegetables and salt, mix well and cook on a medium flame for 2 minutes, while stirring continuously.
- Serve hot.
