Idiyappam and Appam would be incomplete without a bowl of this mouth-watering Vegetable Stew. Easy to prepare, the stew is nothing but mixed vegetables in a gravy of coconut milk perked up with whole spices and green chillies. While the coconut milk gives it a soothing flavour, the spices ensure a splash of excitement too. Cook the vegetables to just the right level, retaining their bright colours, as this will greatly enhance the visual appeal of the Vegetable Stew.

Method
  1. Combine the cornflour and coconut milk in a deep bowl, mix well and keep aside.
  2. Heat the oil in a deep non-stick pan, add the cardamom, clove and cinnamon and sauté on a medium flame for 30 seconds.
  3. Add the green chillies and onions and sauté on a medium flame for 1 minute.
  4. Add the cornflour- coconut milk mixture, vegetables and salt, mix well and cook on a medium flame for 2 minutes, while stirring continuously.
  5. Serve hot.

Creamy coconutty vegetable stew, this stew goes well with appam, neer dosa. This recipe is really good with lot of vegetables and quick to make it.
