Method

For moong dal nimki

  1. To make moong dal nimki, soak the yellow moong dal in enough water in a deep bowl for 30 minutes. Drain well.
  2. Combine the yellow moong dal and 2 tbsp water in a mixer and blend to a coarse paste.
  3. Transfer the paste into a deep bowl, add all the remaining ingredients and knead into a semi-stiff dough without using water.
  4. Divide and roll the dough into 4 equal portions.
  5. Roll a portion of the dough into a 175 mm. (7”) diameter thin circle using a little whole wheat flour for rolling.
  6. Cut the circle vertically into equal size long strips. Repeat step 5 make remaining dough strips.
  7. Place the strips on a greased baking tray and bake them in a pre-heated oven at 180°c (360°f) for 10 minutes on middle rack.
  8. Repeat step 7 to bake remaining moong dal nimki strips.
  9. Remove and cool them completely.
  10. Serve moong dal nimki or store in an air-tight container and use as required.

  1. In a deep bowl, add 1/4 cup yellow moong dal (split yellow gram).
  2. Add enough water.
  3. Cover with a lid and keep aside for 30 minutes. 
  4. Drain well using a strainer.

  12. Add salt to taste.
  13. Knead into a semi-stiff dough without using water.
  14. Divide and roll the dough into 4 equal portions.
  15. Dust some whole wheat flour.
  16. Roll a portion of the dough into a 175 mm. (7”) diameter thin circle using a little whole wheat flour for rolling.
  17. Cut the circle vertically into equal size long strips. Repeat step 5 make remaining dough strips.
     
  18. Place the strips on a greased baking tray.
  19. Bake them in a pre-heated oven at 180°C (360°F) for 10 minutes on middle rack.

This recipes calls for a bit of soaking and planning, but it can be made and stored so I love it... No refined flour and not too much fat but correct spice makes this a true hit.
