A quick and simple recipe, where the spinach and other ingredients are tossed together to give that bitter, sweet and spicy flavor.

Ingredients

2 cups blanched spinach (palak) leaves
1 tbsp oil
1 tbsp finely chopped garlic (lehsun)
1 whole dry kashmiri red chilli , broken into pieces
2 green chillies , slit lengthwise
1/2 tsp soy sauce
a pinch of sugar
a pinch of white pepper powder
salt to taste

Method
  1. Heat the oil in a non-stick pan, add the garlic,green chillies, kashmiri red chillies and sauté on a medium flame for 1 minutes.
  2. Add the spinach, pepper powder, soya sauce and sugar and mix well and cook on a medium flame for 1 minute.
  3. Serve hot.

Not for Indian tastebuds really. The milk-cornflour paste and fried vegetables make it difficult to eat.
