Cucumber, Capsicum and Celery Salad, is a delightful combination of fresh vegetables, fruits and curds which makes this salad hard to resist. The low-fat curd dressing is delicately flavoured with basil and mustard powder. The fruits, vegetables and low-fat curds have few calories, but contains a lot of fibre. Such salads should be had before a meal as they are filling, to avoid overeating during the other courses that follow.

2 cups cucumber cubes
1 cup capsicum cubes
1/4 cup finely chopped celery (ajmoda)
1/2 cup watermelon (tarbuj) cubes
1/4 cup pineapple cubes

To Be Mixed Into A Curd Basil Dressing
1/2 cup thick low-fat curds (dahi)
2 tbsp finely chopped basil
1/4 tsp mustard (rai / sarson) powder
1/2 tsp powdered sugar
salt to taste
  1. Combine all ingredients in a deep bowl, add the dressing and toss well.
  2. Serve immediately.

A good combination of fruits and vegetables in a curd based dressing. I don't like pineapple so I added red capsicum.
