Ingredients

For Thandai
4 1/2 cups full-fat milk , boiled and cooled
1/4 cup powdered sugar
a pinch of freshly ground black pepper (kalimirch)
a few saffron (kesar) strands

To Be Blended Into A Fine Powder
1/4 cup almonds (badam)
2 tbsp poppy seeds (khus-khus)
2 tbsp fennel seeds (saunf)
1/2 tsp cardamom (elaichi) powder
20 whole white peppercorn

For the thandai masala powder

  1. For the thandai masala powder, take ¼ cup of almonds in a bowl. 
  2. Add 2 tbsp of poppy seeds. These are known as khus-khus in local language.
  3. Add 2 tbsp of fennel seeds. This lends a very strong, pleasing and sweet taste to the masala powder and thandai. 
  4. Add ½ tsp of cardamom powder. This is the Indian touch in this drink. 
  5. Add 20 white peppercorns. 
  6. Transfer these ingredients in a mixer jar.  
  7. Grind them into a fine powder. This is how the thandai masala powder looks after blending. 

For the thandai

  2. Boil the full fat milk.
  3.  Cool well. 
  4. Add the preapared thandai masala powder to it. 
  5. Mix it very well using a whisk. The milk should be free of lumps and smooth. 
  6. Refrigerate for 2 hours so all the flavours of the Rajasthani thandai drink blend well. 
  7. Strain the thandai Holi and Diwali recipe through a strainer.
  8. Squeeze out all the excess milk from the strainer. To do so press the leftover mixture in the strainer using a big spoon. 
  9. Collect the strained milk in a deep bowl. Discard the mixture in the strainer. 
  10. Add the powdered sugar. If you don’t have powdered sugar, grind the table sugar in a mixer and sieve it before use. We have used ¼ cup of powdered sugar. You can adjust the sweetness as per your taste. 
  11. Add a pinch of pepper powder. 
  12. Add a few saffron strands. You can microwave the saffron in a microwave safe bowl for 10 to 15 seconds, crush it and then add it to the drink. This helps to lends a better colour of saffron.
  13. Mix the thandai | Rajasthani thandai drink | Homemade thandai Holi and Diwali recipe | how to make thandai powder at home | well. The sugar has to dissolve very well with milk. 
  14. Pour equal quantities of the thandai | Rajasthani thandai drink | Homemade thandai Holi and Diwali recipe | how to make thandai powder at home | into 4 individual glasses and serve chilled. Keep it refrigerated till serving.
