To Be Mixed Into A Stuffing
3/4 cup grated paneer (cottage cheese)
1/3 cup grated mozzrella cheese
3/4 tsp finely chopped green chillies
1/3 cup finely chopped tomatoes
1/4 cup cooked sweet corn kernels (makai ke dane)
salt to taste

For The Tortilla
1 cup plain flour (maida)
1/2 cup whole wheat flour (gehun ka atta)
1/2 tsp salt
1 1/2 tsp oil
whole wheat flour (gehun ka atta) for rolling
oil for cooking

  1. Combine the plain flour, wheat flour, salt and oil in a bowl and knead into a soft dough using enough water.
  2. Divide the dough into 8 equal portions and roll out each portion of the dough into a 125 mm. (5”) diameter circle, using a little wheat flour for rolling.
  3. Cook each tortilla lightly on a hot tava (griddle), using a little oil, till light brown spots appear on both sides. Keep aside.

  1. Divide the stuffing into 4 equal portions and keep aside.
  2. Place a tortilla on a clean dry surface, spread a portion of the stuffing on a tortilla. Place another tortilla on top and press well so that they stick.
  3. Cook on a tava (griddle) using little oil till crisp on both sides.
  4. Repeat with the remaining ingredients to make 3 more quesadillas.
  5. Cut each quesadilla into halves and serve immediately.
