Ingredients
For The Crepes
1/3 cup plain flour (maida)
1/3 cup cornflour
1/3 cup milk
a pinch of salt
melted butter for greasing and cooking
For The Apple Stuffing
2 cups thickly sliced apple (unpeeled)
3 tbsp sugar
2 tsp lemon juice
1/2 tsp cinnamon (dalchini) powder
For The Orange Sauce
1/3 cup orange juice
1/2 tbsp orange crush
1/2 tsp sugar
1 tsp cornflour
1/2 tsp lemon juice
Method
Method
For the crêpes
- Combine the plain flour, cornflour, milk, salt and 1/3 water in a deep bowl and mix well using a whisk till no lumps remain.
- Heat a 150 mm. (6”) non-stick pan and brush it lightly with butter.
- Cool slightly, pour a ladleful of the mixture into the pan and tilt in a circular motion to make a 150 mm. (6”) round.
- Cook it, using a little butter, till light pink spots appear on both the sides
- Repeat with the remaining batter to make 3 more crêpes.
For the apple stuffing
- Combine the apples, sugar, lemon juice and ½ cup of water in a broad non-stick pan, mix well and cook on a medium flame for 9 minutes, while stirring occasionally.
- Add the cinnamon powder, mix well and cook for 30 seconds and keep aside.
For the orange sauce
- Combine all the ingredients in a broad non-stick pan, mix well and cook on a medium flame for 4 to 5 minutes, while stirring occasionally.
- Allow the sauce to cool completely. Once cooled add the lemon juice and mix gently.
How to proceed
- Divide the apple stuffing into 4 equal portions and keep aside.
- Place a crêpes on a clean dry surface, put a portion of the apple stuffing on one side of the crepe and fold to make a semi-circle.
- Repeat step 2 to stuff 3 more crêpes.
- Top it with prepared orange sauce, evenly over the stuffed crêpes.
- Serve immediately.

To make the crêpes, in a deep bowl, add the 1/3 cup plain flour (maida). Since this is an eggless recipe, we only use some flours and milk as our basic ingredients.

Add the 1/3 cup cornflour.

Add a pinch of salt to taste to flours and mix well.

For softness, we will add 1 tbsp. melted butter to the batter.

Apple and orange sauce combination is just great.. the taste is sweet and tangy.. and the apple flavoured with cinnamon powder.. gives a great taste.. i loved this recipe..
