Combine the red chillies, garlic and salt in a mixer and blend till smooth using approx. 2 tbsp of water. Transfer the mixture into a bowl, add the lemon juice and the tempering and mix well. Store in an air-tight container and refrigerate. Use as required.

Tips for red chilli thecha. 1. While buying fresh chillies look for shiny, deep red coloured, crisp and unwrinkled ones. 2. Try to pick out sturdy crisp garlic cloves which do not appear wilted, and you should also check for mold and mildew on the garlic too.

Preparing chopped red chillies

  4. Sauté lal mirch ka thecha on a medium flame for a few seconds.

Grinding the red chilli thecha

  1. In a mixer, put the chopped fresh red chillies.
  2. Add 2 tbsp roughly chopped garlic (lehsun).
  3. Add salt to taste.
  4. Add 2 tablespoons water.
  5. Grind for 15 to 30 seconds.
  6. Use a spoon to move the paste from the sides of the mixer to the centre.
  7. Pulse again for a bit. Remove the paste from the back of the lid with a spoon and put it back in the mixer. Also move the chutney to the centre.
  8. Pulse again and your chutney is ready.

  2. Add 2 tsp lemon juice.
  3. Mix red mirchi thecha well.
  4. Add the seasoning.

After trying this recipe of Thecha with Red Chillies, I realised that there are so many varities of Maharashtian cusiens which I have not yet tried...... Its a low calorie Thecha since we are not using Ground nuts. I can give this to my Father in law even though he is a high cholesterol patient.
