Limbu mari sev is a tangy and spicy evening snack recipe with the gram flour or besan based sev deep fried and then enjoyed with a tinge of lime juice and spice powders.

Ingredients

500 gms besan (Bengal gram flour)
3 tbsp black pepper (kalimirch) powder
1/2 cup lemon juice
salt to taste
a pinch asafoetida (hing)
a pinch of baking soda (optional)
oil for deep-frying
Method


  1. Dissolve soda bicarb in one cup water.
  2. Mix all the ingredients well and bind to a smooth dough using the soda bicarb water.
  3. Put a handful of the dough into the sev mould and press sev directly into the hot oil in the kadai.
  4. Fry till done and crisp on both sides. this sev is a special treat when served with pnk.
