chilli paneer is a restaurant style chilli paneer recipe which is an Indo-Chinese chilli paneer recipe.
chilli paneer is an Indo-Chinese starter recipe which is simply made by batter-coating and deep-frying paneer cubes which are further tossed with green chillies and spring onions and oriental sauces to make this really scrumptious treat. Serve restaurant style chilli paneer recipe as a starter or as an accompaniment to the main course.

Make sure to cook the Indo-Chinese chilli paneer recipe on a high flame all the time or it might lose its crunch. Also, you can shallow fry the paneer, if you do not wish to deep fry it. Fry paneer on high flame or it will get hard, any chewy.
The Chilli Paneer Stir-Fry gets its attractive flavour from a combination of vinegar and oriental sauces like chilli and soya. Make sure you use fresh and succulent paneer to make this dish, so that it remains soft and not chewy after deep-frying.

Ingredients
For Chilli Paneer
1 1/2 cups paneer (cottage cheese) cubes
3 tbsp cornflour
oil for deep-frying
To Be Mixed Into A Batter
1/4 cup cornflour
1/4 cup plain flour (maida)
1 tsp soy sauce
1 tsp chilli powder
1/4 tsp freshly ground black pepper (kalimirch) powder
salt to taste
1/2 cup water
Other Ingredients For Chilli Paneer
1 1/2 tbsp oil
1 tsp grated ginger (adrak)
2 tsp finely chopped garlic (lehsun)
2 tsp finely chopped green chillies
1/4 cup chopped spring onions whites and greens
1/4 cup onion cubes
1/4 cup capsicum cubes
2 tsp red chilli paste
1/2 tsp soy sauce
1/2 tsp vinegar
salt to taste
1 tsp red chilli sauce
To Be Mixed Into A Cornflour- Water Mixture
For The Garnish
1/4 cup finely chopped spring onion greens
Method
For chilli paneer
- Combine the paneer cubes and cornflour in a deep bowl or plate and toss them well.
- Add the above cornflour coated paneer cubes into the prepared batter and toss gently.
- Heat the oil in a deep non-stick pan and deep-fry a few pieces at a time till they turn golden brown in colour from all the sides. Drain on absorbent paper and keep aside.
How to proceed to make chilli paneer
- To make chilli paneer, heat the oil in a deep non-stick kadhai or pan, add the garlic, ginger and green chillies and sauté on a medium flame for a few seconds.
- Add the spring onions, onion cubes, capsicum and sauté on a medium flame for a few seconds.
- Add the red chilli paste, soy sauce, vinegar and red chilli sauce and cook on a medium flame for a few seconds.
- Add the deep-fried paneer cubes and sauté on a high flame for a few seconds.
- Add the cornflour-water mixture, mix gently and cook on a high flame for a few seconds.
- Garnish the chilli paneer with spring onion greens and serve immediately.

Sprinkle 3 tbsp of corn flour over it.

Mix well and keep aside. This step will help paneer lock its moisture and also will help in making paneer crispy on outside after frying.

Add plain flour.

Add 1 tsp of soy sauce.

Add red chilli powder. It will help in giving a nice colour to our fried paneer.

Add salt and pepper powder for seasoning.

Add 1/2 cup water.

Mix well using a whisk and make sure the batter is neither to thick nor too runny.

Once the batter is ready, add the cornflour coated paneer to it.

Mix well using hands or a spoon. Make sure you do it light handedly and carefully so that the paneer doesnt break.

Next, heat oil in a kadhai and drop the coated paneer into the oil craefully.

Fry till golden brown.

Drain on an absorbent paper and keep aside. Make sure you do not skip this step or your chili paneer will end up being super oily and it will affect to the taste of the dish.

Add green chilies. Ginger, garlic and green chilies work as aromates in the recipe and add flavor.

Saute everything together for few more seconds.

Add red chili paste. We have prepared red chili paste using kashmiri red chilies.

Add soy sauce.

Add vinegar.

Add red chili sauce. You can adjust the quantity according to your preference of spice.

Mix well and cook for few seconds.

Add deep fried paneer.

Mix well and saute on high for few seconds again.

Add cornflour mixture. We have used 2 tsp of cornflour against 5 tsp of water.

I looked for this recipe after enjoying the dish in a restaurant and I think this one is actually better! It was very easy and turned out just as I hoped. It was very tasty accompanied by broccoli and baby corn stir fry and fried rice. As I had some leftover batter, I dipped a few mushrooms in the remainder and added them to the dish; they were tasty too.

Finally a recipe that results into authentic paneer chilly (dry)that I have always been craving for, at home! I made it last evening as a crackling starter. It is absolutely sumptuous and tasty and does not need an accompaniment! Follow the recipe to the tee and its restaurant quality all the way!

You can avoid deep frying completely and the paneer cubes as it is.

Hi Simran, In the batter we have mixed equal propotion of cornflour and maida.. To give a soft and crispy texture.. If only maida added it will become chewy, once added in the gravy.

Lot of restaurants use big square pieces of onion and capsicum whereas in this recipe you have use finely chopped onions i like it better when u have cruncy pieces of onion and capsicum with paneer. Just want to know which cutting is more authentic for chilli paneer
