With two discs of bread seated one above the other, layered with tangy sauces and topped with a yummy, cheesy vegetable mixture, this baked snack is just too exciting.

Ingredients

For The Stuffing
1 cup grated processed cheese
5 tbsp finely chopped onions
1/2 cup finely chopped capsicum (red , yellow and green)
5 tbsp finely chopped baby corn
5 tbsp finely chopped zucchini
1 tbsp olive oil
1 tsp finely chopped garlic (lehsun)
2 tsp dry red chilli flakes (paprika)
1 tsp dried oregano
salt to taste
1 tsp red chilli sauce
2 tbsp finely chopped basil

Other Ingredients
28 bread slices
butter for brushing
red chilli sauce for spreading
Method

  1. Heat the olive oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
  2. Add the onions and sauté on a medium flame for 1 minute.
  3. Add the coloured capsicum, baby corn and zucchini and sauté on a medium flame for 2 minutes.
  4. Add the chilli flakes, dried oregano, salt and chilli sauce, mix well and cook on a medium flame for a few seconds.
  5. Switch off the flame, add the cheese and basil and mix well. Keep aside.

  1. Place 2 bread slices on a clean, dry surface and cut them into approx. 62 mm. (2½”) diameter round using a cookie cutter or a vati.
  2. Now cut one round into 50 mm. (2”) diameter round using another cookie cutter or a vati. Only the outer ring is to be used. Discard the centre round.
  3. Apply a little butter and red chilli sauce on a bread roundel, place the bread ring over it and press it lightly.
  4. Put a tbsp of the stuffing in the centre depression of the ring and spread it evenly. Apply a little butter on the edges of the bread ring.
  5. Repeat steps 1 to 4 to make 13 more discs.
  6. Arrange 7 discs on a greased baking tray and bake in a pre-heated oven at 200°c (400°f) for 10 to 12 minutes or till the cheese melts and the discs turn crispy.
  7. Repeat step 6 to bake 7 more discs.
  8. Serve immediately.

Good. I used ketchup to spread on the bread slice since I thought red chilli sauce would make it too spicy as we are already adding it to the vegetables.

This unsual starter recipe is so cheesy and loaded with veggies. I loved when they are baked as they give that amazing crunch. I served this at a recent party and all the guests were like WOW
