For bajra khakhra
 

  1. To make bajra khakhra using olive oil, combine the bajra flour, ginger green chilli paste, garlic, sesame seeds, olive oil and salt.
  2. Add enough hot water and knead well into a firm dough.
  3. Divide the dough into 8 equal portions and roll each on a floured surface into a 125 mm. (5") diameter thin circle.
  4. Heat a tava (griddle), cook one side of the khakhra for 30 seconds, flip, grease with olive oil and repeat on the other side of the khakhra.
  5. Continue cooking the khakhra on a slow flame, while pressing with a khakhra press or a folded muslin cloth, till it turns crisp and golden brown spots appear on both sides.
  6. Repeat for the remaining to make 7 more khakhras.
  7. Serve the bajra khakhra using olive oil as a healthy snack.
