Ingredients

For Vegetable Oats Pancake
1 cup oats flour
1/2 cup grated carrot
1/2 cup finely chopped spinach (palak)
2 tbsp finely chopped coriander (dhania)
2 tsp finely chopped green chillies
salt to taste
3 1/2 tsp peanut oil or oil for greasing and cooking

dahiwali phudina ki chutney or green chutney

  1. To make vegetable oats pancake, combine all the ingredients, along with 1 cup of water in a deep bowl and mix well to form a batter of dropping consistency.
  2. Heat a non-stick tava (griddle) and grease it using ¼ tsp peanut oil.
  3. Pour a spoonful of the batter on it and spread in a circular motion to make 100 mm. (4”) round circle.
  4. Cook, using ¼ tsp of peanut oil, till it turns light brown in colour from both sides.
  5. Repeat with the remaining batter to make 6 more pancakes.
  6. Serve the vegetable oats pancakes immediately with dahiwali phudina ki chutney or green chutney.

To make Vegetable Oats Pancake

  1. To begin making the Vegetable Oats Pancake, we would require oats flour. Put 1 cup quick rolling oats in a small mixer jar.
  2. Pulse until they have turned into a fine powder. You can store the oats flour in an airtight jar for 2 to 3 weeks.
  3. Transfer the oats flour in a deep bowl.
  4. Add the grated carrot. You can even add grated beetroot.

  7. Also, add green chillies. If making for kids, replace the chillies with chilli powder.
  8. Add the salt to taste.
  9. Combine all the ingredients with the help of a spoon.
  10. Add 1 cup of water and mix well to form a batter of dropping consistency. You may need 2-3 tbsp extra depending on the quality of your oats flour.
  11. Heat a non-stick tava (griddle) and grease it using ¼ tsp oil.
  12. Pour a spoonful of the batter on it and  Spread in a circular motion to make 100 mm. (4") thick circle.
  13. Cook Vegetable Oats Pancake using ¼ tsp of peanut oil, till it turns light brown in colour from both sides.
  14. Repeat with the remaining batter to make 4 more Vegetable Oats Pancake.
  15. Serve the Vegetable Oats Pancakes immediately with dahiwali phudina ki chutney.
