Notes on vegetable oats pancake recipe. 1. To begin making the Vegetable Oats Pancake, we would require oats flour. Put 1 cup quick rolling oats in a small mixer jar. 2. Pulse until they have turned into a fine powder. You can store the oats flour in an airtight jar for 2 to 3 weeks. 3. We have used peanut oil in this recipe so that it becomes a healthy veg oats pancake, but you are free to use any vegetable oil you wish.

Ingredients
For Vegetable Oats Pancake
1 cup oats flour
1/2 cup grated carrot
1/2 cup finely chopped spinach (palak)
2 tbsp finely chopped coriander (dhania)
2 tsp finely chopped green chillies
salt to taste
3 1/2 tsp peanut oil or oil for greasing and cooking
For Serving With Vegetable Oats Pancake
Method
For vegetable oats pancake
- To make vegetable oats pancakes, combine all the ingredients, along with 1 cup of water in a deep bowl and mix well to form a batter of dropping consistency.
- Heat a non-stick tava (griddle) and grease it using ¼ tsp peanut oil.
- Pour a spoonful of the batter on it and spread in a circular motion to make 100 mm. (4”) round circle.
- Cook, using ¼ tsp of peanut oil, till it turns light brown in colour from both sides.
- Repeat with the remaining batter to make 6 more pancakes.
- Serve the immediately with dahiwali phudina ki chutney or green chutney.

I tried this recipe.. it was yummy in taste and healthy too.. but it was little soggy from inside even after 15mins of medium cooking.. I am not sure if it''s coz of oats nature of becoming soggy after cooking.
