Traditionally, bhindi is deep fried and used, but here we have steamed it which made the sabzi healthier. We have also cut down the amount of oil in dahi bhindi recipe. If you like dahi bhindi the normal way, you can deep fry the bhindis. Despite having very little oil, your favourite lady finger sabzi is as tasty as ever!

dahi bhindi can be prepared in short time of 15 minutes. To make okra with yogurt we have started with steaming bhindi in a steamer. Once the bhindi are steamed, it might look slimy yet you don’t need to worry as further, it will tend to lose its sliminess. Next, we have made a curd base mixture where we have combined curd with coriander powder, red chilli powder, besan which will help in thickening the sabzi and also if you avoid adding besan there are high chances of your curd curdling. We have mixed all of these well and kept aside. Further, for the tempering, we have heat oil in a broad non-stick pan and add cumin seeds, mustard seeds and fennel seeds followed by asafoetida and curry leaves. Once, all of these is cooked add the curd mixture and steamed bhindi, cook well and serve dahi bhindi with coriander garnished on top.

  1. To make dahi bhindi, steam the bhindi for 5 to 7 minutes till soft. Keep aside.
  2. Combine the curds, coriander powder, chilli powder, gram flour and salt with 2 tablespoons of water and keep aside.
  3. Heat the oil in a non-stick pan and add the cumin seeds, mustard seeds, fennel seeds, asafoetida and curry leaves.
  4. When the seeds crackle, add the curd mixture and steamed bhindi and bring to a boil. Simmer for 3 to 4 minutes.
  5. Serve the dahi bhindi hot, garnished with the coriander.

How to make Dahi bhindi

  2. Steam the bhindi for 5 to 7 minutes till soft. 
  3. Keep aside. It may look slimy at this atge but further when the bhindis are cooked the sliminess will reduce.
  4. In a deep bowl, take curd.
  5. Add coriander powder.
  6. Add chilli powder.
  7. Add gram flour.
  8. Add salt.
  9. Add 2 tablespoons of water.
  10. Whisk well and keep aside.
  11. To prepare dahi bhindi ki subji, heat the oil in a broad non-stick pan.
  12. Once the oil is hot, add the cumin seeds.
  13. Add mustard seeds.
  14. Add fennel seeds.
  15. Add asafoetida and curry leaves.
  16. Cook for few seconds and when the seeds crackle.
  17. Add the curd mixture.
  18. Add steamed bhindi.
  19. Mix well and bring to a boil. Simmer for 3 to 4 minutes.  Do stir once or twice in between and ensure it is not sticking to the bottom of the pan.

I have tried this recipe and it''s tastes good. I don''t say the best bhindi recipe but yes it''s less time taking and tastes different from daily bhindi sabji. So thanks for giving me another choice to prepare bhindi.

I really loved this recipe..its tangy.. the flavour of the spices was just perfect.. i loved this to have it with hot rotis.. and steam rice.. I got a different varition to make bhindi.. now.. Thank you for the recipe..

Tarla Dalal    Hi.. we have tried this recipe.. It has turned out well. Please could you let us know what have gone wrong. As the recipe says.. to cook only for 3 minutes, once the curds have been added. I hope you have followed the same procedure.
