50 gms margarine
150 ml water
65 gms plain flour (maida)
2 eggs
170 ml double cream

for icing;
125 gms chocolate
15 gms butter

  1. Melt butter in saucepan . add the water and bring to boil.remove from heat add
  2. The flour all at once and heat well until the mixture leaves the sides of the pan
  3. Clean.
  4. Cool add baeten eggs.
  5. Beat until the misture is mix well
  6. Fill in a piping bag with star nozzle and pine 7.5 cm lenghts into a dampered
  7. Baking sheet . bake in the hot oven 150 c until crispy golden brown.
  8. Cool it on a wire rack.
  9. Fill each eclairs
  10. Melt the chocolate and butter on a pan of hot water and mix well.
  11. Deep eacheclair into the chocolate place on a wire rack.
  12. Make 10to 12 eclairs.
