A squeeze of lemon adds tang to this recipe while a sprinkling of pepper gives it a peppy note of spiciness. The Black-eyed Bean Salad is easy to make, but must be tossed just before serving to enjoy the rhapsody of flavours and textures.

How to boil Black-eyed peas salad

  1. To prepare chawli and mixed vegetable salad, pick and clean the black-eyed beans.
  2. Wash them in a bowl of water 3-4 times or under running tap water.
  3. Combine chawli and enough water in a deep bowl. Cover with a lid and keep aside to soak 8-10 hours or overnight.
  4. In the morning, drain chawli well using a strainer.
  5. Transfer the soaked black-eyed peas to a pressure cooker.
  6. Add the salt and ___ cup of water.
  7. Pressure cook it for 3 to 4 whistles over a medium flame or until they are soft. Allow the steam to escape naturally and then carefully open the lid.
  8. Drain the boiled black-eyed peas using a strainer and keep aside.

How to make chawli and mixed vegetable salad

  1. To make black-eyed peas and mixed vegetable salad, in a deep bowl take soaked and boiled chawli.
  2. Add finely chopped tomatoes. They are a great source of vitamin C, vitamin K, potassium and folate.
  3. Add finely chopped onions for an added crunch. Jains can skip adding onions. Pan tossed nuts like walnuts, pistachios or slivered almonds can be added to give wholesome black-eyed bean salad to give a nice bite.
  4. Add finely chopped capsicum.
  5. Add chopped cucumber. Other vegetables like grated beetroot, carrot, boiled corn, colorful peppers can also be added.
  6. Add shredded iceberg lettuce. To get crispy lettuce leaves, clean a lettuce head, remove the leaves and shred them using a sharp knife. Submerge the lettuce leaves in ice-cold water to make them crispy. Before assembling the salad, pat dry the lettuce leaves using a kitchen towel.
  7. Add finely chopped coriander for a refreshing hint.
  8. Add finely chopped green chilies. You can also use chilli flakes, paprika powder or red chilli powder. The quantity can be increased or decreased as per the spice level you prefer.
  9. Drizzle lemon juice. If you do not have fresh lemon juice available, replace it with chaat masala or dried mango powder.
  10. Sprinkle salt and freshly ground black pepper to taste. Other aromatic spices like roasted cumin seeds powder, black salt can also be added to elevate the flavor of black-eyed peas vegetable salad.
  11. Combine all the ingredients in a deep bowl and toss well.

Black eyed Bean salad is supremely healthy. Its almost a one dish meal as its not exactly light. Its protein content and dressing make it a must have recipe for all!
