Ingredients

For The Covering
1 cup whole wheat flour (gehun ka atta)
1/2 cup plain flour (maida)
3 tbsp oil
salt to taste

For The Stuffing
2 tbsp oil
1 1/4 cups green peas
a pinch baking soda
1/4 cup chopped coriander (dhania)
1/4 cup grated coconut
1 tbsp green chilli paste
1 tbsp ginger (adrak) paste
2 tsp lemon juice
1 tsp garam masala
1 tsp sugar
salt to taste

oil for deep frying

  1. Combine all the ingredients in a bowl, using enough water knead a semi soft dough.
  2. Divide the dough into a equal portions, roll into small balls and keep aside.

For the Stuffing

  1. Heat the oil in a pan, add the peas and baking soda.
  2. Cook on a slow flame covered with a lid. Stir often for even cooking.
  3. When the peas are cooked remove from the flame.
  4. Transfer the peas on a plate and allow to cool.
  5. Half crush the peas with hands.
  6. Add the coriander, coconut, ginger paste, chilli paste, garam masala, lemon juice, sugar and salt, mix well.
  7. Divide the stuffing into equal portions and keep aside.

  1. Roll out each balls to a small puri, put one portion of stuffing, fold and stick the edges making it into half round shapes.
  2. Decorate the edges by creating designs with your fingers to make ghughra.
  3. Heat the oil in a kadhai and deep-fry the ghughras till it turns to golden brown in colour from both the sides.
  4. Repeat with the remaining ingredients to make more ghughras.
  5. Serve hot with green chutney.
