British Shepard's pie with twist(sss). Filling is more mexican style and topping is of frozen french fries rather than the original mashed potatoes.
Although the recipe has a lot of twist the result is amazingly delicious.

Ingredients

For The Filling
6 garlic (lehsun) flakes , sliced
2 onions , finely chopped
3 tomatoes , blanched , peeled and finely chopped
1 tbsp tomato sauce
2/3 cup sweet corn kernels (makai ke dane) , par-boiled
1 small green capsicum , diced
1 cup rajma (kidney beans) , cooked
1 cup black-eyed beans , cooked
1/2 cup fresh cream
1/2 cup cheddar cheese , grated
1 tsp chili powder
1/2 tsp black peppercorns (kalimirch)
salt to taste
2 tbsp butter

For The Topping
3 tbsp cheese for topping
250 gms frozen french fries (available in market)
salt and pepper to taste
Method

  1. Heat butter in a pan. Add garlic and onion and cook till translucent. Add capsicum and cook for 1/2 min. Add tomatoes and cook for around 5 min till thick. Add salt, pepper, chili powder and tomato sauce. Add kidney beans, black-eyed beans, corn and cook for 2 min. Keep aside.
  2. In a bowl, combine the cream, 1/2 cup cheese, 1/2 tsp salt, 1/2 tsp pepper and mix till smooth.
  3. Pre-heat the oven at 200*C. Grease a baking dish with butter. Pour beans filling in it. Top with cream.

  1. Take out french fries from freezer. Season with salt and pepper.

How to proceed

  1. Arrange a layer of french fries evenly in single layer over the baked cream mixture.
  2. Bake for 15-18 min till light brown.
  3. Take out from oven, sprinkle 3 tbsp cheese and bake for more 5 min or until golden. Let stand for 10 min.
  4. Serve warm with green salad.
