Vegetable fried rice is a delightful dish that is extremely popular in india too! chinese rice is cooked and fluffed up with a fork so all the grains are separate. This rice is now ready to be tossed in with the finely chopped vegetables. The carrots and spring onions add a nice crunch while the soya sauce and fresh white pepper give the rice a zingy flavor! this makes an ideal lunch box meal packing in all the nutrition that you need to keep you through the day.

Makes 4 servings


Ingredients

1 tbsp oil
1/2 cup french beans cut
diagonally into thin strips
1/2 cup shredded carrot
1/2 cup shredded cabbage
1/2 cup capsicum , cut into long thin strips
1 tbsp finely chopped celery
1/2 cup finely chopped spring onions whites
2 cups chinese rice
1/2 cup finely chopped spring onion greens
1 tsp soy sauce
1/4 tsp of freshly ground white pepper powder
salt to taste

For Serving
chilli sauce
soy sauce
chillies in vinegar
vegetable manchurian

Method
  1. Heat the oil in a wok or kadhai on a high flame till it smokes.
  2. Add the french beans, carrots, cabbage, capsicum, celery, spring onion whites and sauté on a high flame for 3 to 4 minutes.
  3. Add the rice, spring onion greens, soya sauce, white pepper powder and salt, toss well and cook on a high flame for 2 minutes. Serve hot with chilli sauce, soya sauce, chillies in vinegar and vegetable manchurian.

i tried this receipe yesterday made the manchuran too and i made sweet and sour sauce red chilly sauce to go with it it really was hit and i loved it would appreciate if you could add how to make the sweet and sour sauces and the red chillies sauce that they serve in resturants. The chinese fried rice and manchurian were a hit i loved it and so did the family all went for second helpings, thanks tarla aunty your recipes are great.
