Parwal is one of our country’s lesser-known vegetables, but lends itself well to the cuisine of western india. Combined with the versatile potato in parwal aur aloo ki subzi, it becomes so attractive that kids will love it too!

Ingredients


To Be Mixed Into A Masala Mixture
1 cup freshly grated coconut
1 cup finely chopped tomatoes
1/2 cup finely chopped coriander (dhania)
1/2 tsp turmeric powder (haldi)
2 tsp chilli powder
3 1/2 tsp coriander-cumin seeds (dhania-jeera) powder
1/4 tsp garam masala
4 tsp sugar
salt to taste

Other Ingredients
2 cups peeled and halved snake gourd (padwal)
1 cup potatoes , peeled and cut into fingers
2 tbsp oil
salt to taste

Method
  1. Combine the snake gourd, potatoes, oil, salt and 1 tbsp of water in a microwave safe bowl, mix well and microwave on high for 8 minutes, stirring thrice in between after every 2 minutes.
  2. Add the prepared masala mixture and 1 tbsp of water, mix well and microwave on high for 3 minutes, stirring once in between after 1½ minutes.
  3. Serve immediately.
