A freshly tossed lettuce, crouton and cheese salad can be really delicious and satisfying. What’s even more important is that it is simple to make. Crisp lettuce, soft, grated cheese; toasted bread croutons, crackling fresh pepper, piquant vinegar and virgin olive oil make all the difference. Enjoy garnished with spring onions.

Makes 4 servings


Ingredients


To Be Mixed Into A Dressing
2 tbsp oil
1 tbsp vinegar
salt and freshly ground black pepper powder

Other Ingredients
3 cups lettuce (iceberg , long leaf etc.) ,
torn into pieces
1/2 cup grated processed cheese
1/2 cup chopped spring onions whites and greens
1/2 cup fried or toasted bread croutons

Method
  1. Place lettuce in cold water for 10 minutes and drain well. This will make them crisp.
  2. Just before serving, combine all the ingredients, add the dressing and toss well.
  3. Serve immediately.

This looks great, and here in the USA, I have been getting wheat bread. Let it be 2-3 days old, cut into squares, oil with a bit of olive oil, we get vegetarian parmesan (with Microbial enzymes), and some rosemary, and then put these in the oven for 5-7 minutes (300 F. These are the best croutons and we would just not like any other ready made ones.As for the lettuce, Romaine or Green Leaf is nutritious than plain Iceberg.
