Pressure Cooker Mix Veg Curry, also known as Mixed Vegetable Sabzi in a Pressure Cooker, is a quick, flavorful, and nutritious Indian curry that brings together a medley of fresh vegetables, paneer, and aromatic spices. This dish is perfect for busy days when you want a wholesome homemade meal without spending too much time in the kitchen. Prepared in a pressure cooker, it locks in flavors and nutrients, ensuring that every bite is rich, comforting, and satisfying.
The heart of this Quick Mix Veg Masala lies in its vibrant masala paste, made from onions, tomatoes, garlic, ginger, and a blend of spices like turmeric, red chilli, coriander-cumin powder, and garam masala. This paste forms the flavorful base of the curry, giving it a deep, spiced aroma and a luscious texture. The pressure cooking technique helps the masala blend beautifully with the vegetables, creating a curry that is perfectly spiced and well-balanced.
The mix of vegetables — carrot, beans, cauliflower, peas, and capsicum — adds color, texture, and a variety of nutrients to the dish. Each vegetable brings its own benefit: carrots add vitamin A, peas and beans bring protein and fiber, while cauliflower adds a hearty bite. The inclusion of paneer (cottage cheese) provides additional protein and richness, making the curry filling and nutritious. The final touch of kasuri methi (dried fenugreek leaves) and fresh corianderenhances the flavor with an irresistible earthy aroma.
One of the biggest advantages of this Pressure Cooker Mix Veg Curry is its speed and convenience. The entire recipe takes under 20 minutes to prepare and is perfect for a busy weekday lunch or dinner. Since the pressure cooker evenly distributes heat and cooks quickly, the vegetables retain their nutrients and color, while soaking up all the flavorful spices. This makes it not only tasty but also healthy and easy to digest.
Overall, Mixed Vegetable Sabzi in a Pressure Cooker is a simple yet wholesome curry that pairs beautifully with chapati, paratha, jeera rice, or plain steamed rice. It is a great way to include multiple vegetables in one meal and can be easily customized by adding seasonal veggies. With its aromatic spices, creamy texture, and homely taste, this curry is the perfect example of comfort food — hearty, nourishing, and absolutely delicious.

I just made this dish for lunch today, I replaced the cream with yogurt to cut down on fat. The gravy came out very flavorful but cooking in a pressure cooker made the veggies taste like boiled. Next time I might just skip the pressure cooking part and cook the veggies in microwave. Thanks for the recipe.
