  1. Heat 2 tbsp of oil in a broad non-stick pan, add the paneer and cook on a medium flame for 2 minutes till golden brown in colour, while tossing occasionally.
  2. Remove the paneer on a plate and keep aside.
  3. Re- use and reheat the same oil in a broad non-stick pan, add the ginger paste and green chillies and sauté on a medium flame for a few seconds.
  4. Add the hara chana and sauté on a medium flame for 1 to 2 minutes.
  5. Add the cooked paneer, chaat masala, lemon juice, 1 tablespoon coriander, salt and mix well and cook on a medium flame for 1 to 2 minutes, while tossing occasionally.
  6. Garnish with coriander and mix well.
  7. Serve paneer aur hare chana ki chaat hot

how to soak and cook hare chana

  1. For the paneer aur hare chana ki chaat first buy good quality chana. Choose uniformly-sized and nice green coloured chana, devoid of white or dark spots and holes.
  2. Wash them and add enough water for soaking.
  3. Cover with a lid and keep aside. You need to soak these chana for at least 8 hours or overnight.
  4. Next day, drain the hara chana using a strainer.
  5. Transfer the hara chana into a pressure cooker.
  6. Add more water for cooking green chickpeas for hare chane ki chaat.
  7. Close the lid of the pressure cooker and allow them to cook for 4 whistles.
  8. Allow the pressure cooker to cool down and then open the lid. This is how the hara chana looks after cooking. They should be perfectly cooked to be able to feel the bite, and not overcooked or mushy.
  9. Again drain the excess water using a strainer. Keep the cooked green chickpeas aside.
  10. Soaked and boiled hara chana (green chick peas) are ready for paneer aur hare chana ki chaat.

  11. Add salt to taste. We added 1/4 salt.
  12. Mix well.
  13. Cook on a medium flame for 1 to 2 minutes, while tossing occasionally.
  14. Garnish with 1 tbsp chopped coriander (dhania).
  15. Mix well.
  16. Serve hot.

This is such a quick and easy chatpata recipe. If the chana is soaked, there is not much preparation for this. The chaat masala has a strong taste and lemon juice adds to the tanginess of this chaat.
