Microwave Methi Mutter Malai: A Rich and Creamy Delight

Methi Mutter Malai is a classic Indian curry known for its luxurious texture and unique flavor, a perfect balance of the slight bitterness of fenugreek and the sweetness of peas. This Microwave Methi Mutter Malai recipe makes this rich dish incredibly quick and easy to prepare. Instead of a long cooking process, the microwave is used to quickly cook the ingredients, resulting in a creamy, luscious curry in just minutes. This innovative approach to a traditional dish makes it perfect for a weeknight dinner or any time you need a delicious meal in a hurry.

Preparing the Base: Fenugreek, Peas, and a Flavorful Paste

The recipe begins by preparing the core ingredients in the microwave. The fenugreek leaves (methi) are first salted to draw out their moisture, which helps reduce their bitterness. They are then sautéed in oil with cumin seeds in the microwave, a crucial step that builds the initial flavor. Separately, the green peas are cooked in water until they're tender. The heart of the gravy, however, is a creamy paste made by blending onions, ginger, garlic, cashews, and poppy seeds. This paste provides the rich, nutty base that gives the curry its characteristic smooth and thick consistency.

Cooking the Gravy to Perfection

With the base ingredients prepped, the next step is to cook the gravy itself. The prepared paste is combined with the remaining oil in a microwave-safe bowl and cooked for a couple of minutes to develop its flavors. This quick cooking ensures that the raw taste of the ingredients is gone, leaving behind a fragrant and savory blend.

Combining and Finishing the Curry

This is where all the prepped components come together. Milk and fresh cream are added to the cooked paste, along with the microwaved fenugreek leaves and green peas. The addition of cream gives the gravy its signature "malai" richness. A pinch of sugar and salt is added to balance the flavors. This mixture is then microwaved for a final two minutes, allowing all the ingredients to meld together into a smooth, creamy, and irresistible curry.

A Quick and Delicious Meal

The finished Quick Methi Matar Malai is a testament to how the microwave can be used to create traditional dishes with impressive results. The dish is not only visually appealing with the vibrant green of the peas and fenugreek but also has a mouthfeel that is both rich and comforting. This curry pairs perfectly with naan or rice, making it a fantastic and fast option for a complete meal. It’s a great way to enjoy a classic Indian dish without spending hours in the kitchen.

For the Methi Malai Mutter Smooth Paste

    1. In a mixer grinder, take 1/2 cup roughly chopped onion.

    2. Add 1 1/2 tsp roughly chopped green chillies

    3. 1 tsp roughly chopped ginger (adrak).

    4. Add garlic (lehsun) cloves to it.

    5. Add 2 tbsp cashew nuts (kaju).

    6. Add 2 tsp poppy seeds (khus-khus).

    7. Add around 2.5 tbsp of water.

    8. Grind into a smooth paste and keep aside.

How to make Methi Mutter Malai

    1. Clean and remove fenugreek leaves (methi) leaves from the stem.

    2. Chop the fenugreek leaves (methi) leaves.

    3. Wash the fenugreek leaves (methi) leaves so that the dirt goes away.

    4. Sprinkle salt and mix well using your hands.

    5. Keep aside for 15 minutes. Squeeze out the water and discard it. This is the trick to get rid of the bitterness of methi leaves, as all the juices are drained before adding them to a gravy.

    6. Heat 1 tablespoon of oil in a microwave safe bowl.

    7. Add the 1/4 tsp cumin seeds (jeera) and microwave on high for 30 seconds.

    8. Add the fenugreek leaves, mix well and microwave on high for 2 minutes. Keep aside.

    9. Combine the 1/2 cup green peas with 2 tablespoons of water in a microwave safe bowl and microwave on high for 2 minutes. Keep aside (do not drain the water).

    10. Heat the remaining 1 tablespoon of oil in a microwave safe bowl.

    11. Add the prepared paste.

    12. Mix well and microwave on high for 2 minutes.

    13. Add the 1/2 cup milk, 3 tbsp fresh cream, a pinch of sugar, cooked fenugreek, green peas and a little salt to taste, mix well and microwave on high for 2 minutes.

    14. Serve Methi mutter malai | Punjabi methi matar malai | methi matar malai hot.

I could not believe when I saw this recipe that it can be made in a microwave and that also so easily and quickly. Really great in taste with some hot butter naan.
