For masoor beets salad
 

  1. Heat the olive oil in a broad non-stick pan, add the zucchini and capsicum and sauté on a medium flame for 2 minutes. Cool.
  2. Transfer to a deep bowl. Add beetroot, carrot, iceberg lettuce, red cabbage, cherry tomatoes, feta cheese and cooked whole masoor.
  3. Cover with a cling wrap and chill in the fridge till serving.
  4. Just before serving add the dressing. Toss masoor, beets, zucchini , peppers saladwell.
  5. Serve masoor, beets, zucchini , peppers salad immediately.
