For lauki ka raita
 

  1. To make lauki ka raita, combine the bottle gourd, onions, green chillies, ginger and 3/4 cup of water in a deep non-stick pan, mix well and cover with a lid and cook on a medium flame for 10 minutes or till all the water evaporates, while stirring occasionally. Keep aside
  2. Transfer the mixture into a deep bowl, add the curds, peanuts and salt, mix well and keep aside.
  3. For the tempering, heat the oil in a small non-stick pan and add the mustard seeds.
  4. When the seeds crackle, add the curry leaves and sauté on a medium flame for a few seconds.
  5. Pour this tempering over the curds-bottle gourd mixture and mix well.
  6. Serve the lauki ka raita immediately.

Method to make Lauki ka Raita

 

    1. To begin making the Lauki ka Raita recipe (Dudhi Raita), wash and peel a medium sized Lauki. Lauki or bottle gourd is a very nutritious vegetable which people generally do not like eating in the form of subzi so; this is a nice way to incorporate in our diet.     2. Peel it using a peeler.
    3. Chop the bottle gourd and keep aside. You can even grate it using a hand grater if you don’t like the mouth feel of cubed lauki.

    9. Pour ¾ cup of water and mix well.
    10. Cover with a lid cook on a medium flame for 10 minutes or till all the water evaporates, while stirring occasionally. You will notice the doodhi has turned soft. Keep aside to cool slightly.
    11. Transfer the mixture into a deep bowl.
    12. Add the whisked curds.
    13. Finally, add peanuts, as the peanuts are coarsely crushed it would give crunch to the raita.
    14. Add salt. Additionally, you can even add jeera powder to enhance the flavor of Lauki raita( Dudhi Raita).
    15. Mix well and keep aside.
    16. For the tempering of bottle gourd raita (Dudhi Raita), heat the oil in a small non-stick pan.
    17. Once the oil is hot, add the mustard seeds.
    18. When the seeds crackle, add the curry leaves and sauté on a medium flame for a few seconds.
    19. Pour this tempering over the Lauki ka Raita recipe (Dudhi Raita) or curds-bottle gourd mixture and mix well. Check the seasoning and adjust to suit your taste buds. The tempering is totally optional.

Different than other raitas like cucumber as this raita has a blend of onions and peanuts along with a flavourful tempering too. This raita pairs well with any kind of Indian subzi-roti.

Good. Very different and easy recipe. Adding hing in tadka probably would enhance the taste.

Simple but tastes great. It''s a raita so should be enjoyed as a part of a meal, but I often have it as a healthy snack as well.
