Ingredients

To Be Blended Into A Hummus (using 3 Tbsp Water)
1 cup soaked and boiled kabuli chana (white chick peas)
2 tbsp olive oil
2 garlic (lehsun) cloves
1/4 cup curd (dahi)
salt to taste

Other Ingredients For Toasted Hummus Sandwich With Vegetables
12 toasted bread slices
1 tbsp olive oil
1 tsp finely chopped garlic (lehsun)
1/4 cup finely chopped onions
1/2 cup finely chopped coloured capsicum
1/2 cup finely chopped broccoli
1 tbsp finely chopped basil
1 tsp dried oregano
2 tsp dry red chilli flakes (paprika)
1 tbsp grated processed cheese
salt to taste
6 tsp butter for spreading
Method
    Method
  1. To make toasted hummus sandwich with vegetables, heat the olive oil in a deep non-stick pan, add the garlic and onions and sauté on a medium flame for 1 minute.
  2. Add the capsicum and sauté on a medium flame for 1 minute.
  3. Add the broccoli, basil, oregano, chilli flakes, cheese and salt and sauté on a medium flame for 1 minute.
  4. Switch off the flame, cool the mixture slightly, add the prepared hummus and mix well.
  5. Divide the mixture into 6 equal portions and keep aside.
  6. Place 2 toasted bread slices on a clean, dry surface, spread 1/2 tsp of butter on each slice. Spread a portion of the mixture evenly on a buttered bread slice and cover it using another buttered bread side facing downwards and press it lightly.
  7. Repeat step 6 to make 5 more sandwiches.
  8. Cut each toasted hummus sandwich with vegetables diagonally into 2 equal pieces.
  9. Serve immediately.

To make the hummus

  1. Take a small jar of the blender and put the soaked and boiled chickpeas in it. Before boiling the chickpeas, it is very important to soak them beforehand for 6-8 hours to ensure proper cooking. We have pressure cooked the kabuli chana as it saves time but if you do not have it, then you can even boil them.
  2. Add the olive oil to the blender. Olive oil is actually the second most important element of hummus and helps the chickpeas blend smoothly into a paste.
  3. Now add the garlic cloves. We are adding 2 medium sized garlic cloves for a subtle garlic taste, but you can add more according to your preference.
  4. Now we add about 1/4th cup of curd/yogurt and some salty to taste. While yogurt is used here as a replacement of tahini, it actually forms a part of the Turkish hummus recipe and not the Lebanese. You can even try different variations of hummus in the sandwich like Spinach hummus or the Spicy Garlic Hummus.
  5. Add 3 tbsps of water and carefully shut the lid of the blender jar. Blend the chickpeas into a smooth paste. Since there are too many solids in the jar, you might have to open it a couple of times, mix it with a spoon and then blend again. This will ensure that even all the tiny pieces are blended properly. Keep aside.

For the vegetable and hummus stuffing

  1. Heat the olive oil in a deep non-stick pan and add the garlic once the oil is hot.
  2. Add the onions and sauté on a medium flame for 1 minute or till translucent. We have finely chopped both onion and garlic so that no big chunks come in the mouth.
  3. Add the colored capsicums and sauté on a medium flame for 1 minute or till soft. We have used a variety of colored capsicums but if you don’t have different colors, you can use just one in a larger quantity. The different colored capsicums provide a little sweetness to the stuffing.
  4. Now we will add some finely chopped broccoli.
  5. Then add the finely chopped basil for a fresh, pleasant taste.
  6. We will now add the dried herbs – oregano and chilli flakes. Both these herbs are crucial in any Lebanese or middle eastern recipe as they give such a unique taste.
  7. Finally add the cheese and salt to the veggies and sauté on a medium flame for 1 minute or till the cheese melts and completely mixes with the vegetables.
  8. Switch off the flame and keep the mixture aside to cool slightly.
  9. Finally add the prepared hummus to the veggies and mix well till evenly mixed. The consistency of this should be like that of a spread or a dip so that it can be easily applied over bread.

How to proceed

  1. Place 2 toasted bread slices on a clean, dry surface.
  2. Spread 1/2 tsp of butter on each slice of bread.
  3. Spread a portion of the mixture evenly on one buttered bread slice. This can be easily done as this mixture is of a spreadable consistency.
  4. Cover this using the other buttered bread side facing downwards and press it lightly. If you want even add more cheese on this before adding the other bread slice.
  5. Repeat steps 1 to 4 to make 5 more sandwiches.
  6. Cut each sandwich diagonally into 2 equal pieces.
  7. Serve immediately.

This sandwich is amazing and uses such colourful vegetables. I give it to my kids everyday and they enjoy it and eat all the veggies in it without being fussy. Totally healthy and tasty. Must try.
