Method

For the uncooked salsa
 

  1. Combine all the ingredients in a bowl and mix well with the back of a spoon.
  2. Keep aside for 30 minutes.


For the cheese sauce
 

  1. Combine the cheese and milk in a broad non-stick pan and cook on a medium flame for 2 to 3 minutes, while stirring continuously.
  2. Switch off the flame, add the mustard powder and salt and mix well. Keep aside.


How to proceed
 

  1. To make nachos with salsa and baked beans, arrange 1 cup of corn chips on a plate, pour ½ cup bakes beans evenly all over them.
  2. Spread ½ portion of the uncooked salsa and ½ the cheese sauce over it.
  3. Sprinkle 1 tbsp of spring onion whites, 1 tbsp of spring onion greens, 1 tbsp of olives and ½ tsp dry red chilli flakes over it.

For the uncooked salsa:

 

    1. To make the Nachos with Salsa and Baked Beans, we first need to make the salsa. For that, take a bowl and add tomatoes to it. We have finely chopped the tomatoes for this.

    2. Now, add the cheese slices. Tear the cheese slices into small pieces so it becomes easier to melt. You can even use grated cheese but cheese slices is faster and easier. Mix well and cook on a medium flame for 2 to 3 minutes, while stirring continuously. It is important to stir continuously so that the milk and cheese don’t burn.
    3. Switch off the flame and add the mustard powder. This adds a unique flavor to the cheese sauce.
    4. Also and the salt and mix well. Keep aside. As the cheese is already salty, be careful of how much salt you add. You can even add a little pepper powder if you wish.
To make Nachos with Salsa and Baked Beans:

 

    1. Take a serving plate and arrange 1 cup of corn chips on it. We can use the store bought variety but the homemade corn chips taste much better!
    2. Pour ½ cup of baked beans evenly all over the corn chips. The baked beans are store bought. You can also use fresh Refried beans which are lot healthier than canned baked beans. Just follow our recipe of refried beans and that can also be served as a snack or given with whole wheat tortillas
    3. Spread ½ portion of the uncooked salsa over it.
    4. Also pour ½ the cheese sauce over it.
    5. Sprinkle 1 tbsp of spring onion whites on it for crunch.
    6. Also sprinkle 1 tbsp of spring onion greens over it.
    7. Sprinkle 1 tbsp of olives over the spring onions. This will add a little zingyness to the Nachos with Baked Beans and Salsa.

So delicious and delightful.. It is a little tedious but the result is totally worth the effort you put in. The baked beans with crunchy salsa and nacho chips along with the cheese sauce over it, makes it totally irresistible. I sometimes avoid the baked beans and just prepare cheese sauce and salsa. It tastes equally delicious. You can do that too if you are in a hurry.
