- To make mayo veg curd sandwich, divide the stuffing into 3 equal portions and keep aside.
- Place a bread slice on a clean, dry surface with the buttered side facing upwards.
- Spread a portion of the stuffing evenly on it and sandwich it using another bread slice with the buttered side facing downwards.
- Cut the mayo veg curd sandwich diagonally into 2 equal pieces.
- Repeat steps 2 to 4 to make 2 more mayo veg curd sandwiches.
- Serve the mayo veg curd sandwich immediately.

For preparing the Mayo Veg Curd Sandwich stuffing, in a deep bowl, take ½ cup mayonnaise. You can use eggless or mayo without eggs as per your preference. We have made use of this recipe easy homemade mayonnaise recipe prepare eggless mayo at home.
To this, add curd, it provides a rich and creamy mouthfeel to the mayo curd sandwich. Make use of fresh curd. If you don’t know how to make curd at home, refer our recipe with detailed step by step photos to make dahi at home.
Next add the shredded red cabbage. If you have green then make use of green cabbage.
Add the sliced onion. Instead of slicing, if you have time then you can even finely chop all the vegetables.Add the capsicum slices. We have used all 3 variations – red, yellow and green but, you can always add as per the availability.
For flavoring, add garlic paste. If you are Jain then skip adding onion, garlic.
Next add the tomato ketchup. It provides a tangy flavor to the Mayo Veg Curd Sandwich. Also, add chilli sauce. Red chilli flakes or paprika powder can be used as substitutes.
Finally, add tabasco sauce. This is totally optional. Sriracha, red chilli sauce, chilli-garlic sauce can be used if you have those instead. Season the stuffing with salt and pepper.

Spread a portion of the stuffing evenly over the buttered side facing upwards of a bread slice.
Sandwich it using another bread slice with the buttered side facing downwards.

Repeat steps 2 to 4 to make 2 more Mayo Veg Curd Sandwichs. Serve immediately.
