Ingredients

8 capsicums, halved and deseeded
3 cups steamed rice
1 3/4 cups (10-ounce package) frozen green peas and carrot
1 cup corn (makai ke dane)
1/2 cup (about 4) spring onions, chopped
1 3/4 cups (16-ounce jar) Hot Sauce
1 1/2 cups (6 ounces) mozzarella cheese
Method


  1. Preheat oven to 375º f.
  2. Place bell peppers in microwave-safe dish with 3 tablespoons water.
  3. Cover with plastic wrap.
  4. Microwave on high (100%) power for 4 to 5 minutes or until slightly tender.
  5. Drain.
  6. Combine rice, peas and carrots, corn, green onions, 3/4 cup salsa and 1 cup cheese in large bowl.
  7. Fill each pepper with about 1/2 cup rice mixture.
