4 slices of fresh and soft white bread
1 small carton or 8 tbs. clotted cream or double cream or malai
3 to 4 tbsp chopped mixed nuts (blanched almonds, cashew nuts, pistachios)
1 tbsp raisins (kismis), washed if necessary

Method

  1. Place bread slices on a flat surface/board and remove crusts completely, using a sharp knife.
  2. Place cream/malai in a bowl and beat gently, not too stiff. if it is beaten too stiff, the filling will get too dry.
  3. Also, a little of the cream seeped into the bread enhances the taste.
  4. Add nuts, sultana, raisins and sugar to the creama and mix well.
  5. Place two slice of bread on the board and spoon out half the cream mixture onto each slice.
  6. Spread evenly and cover with the other slice.
  7. Wrap each ‘sandwich'' in a foil and leave in the fridge, until ready to serve.
  8. Slice each sandwich into 9 bite size squares and serve with tea or coffee.
