Vegetable pulao, an aromatic pulao with low-cal but vitamin a rich chunky mushroom and mixed vegetables – best served with vegetable raita.

Ingredients
Method
  1. Clean, wash and soak the rice in enough water for atleast 10 to 15 minutes. Drain and keep aside.
  2. Heat the ghee in a non-stick kadhai, add the cinnamon, cloves, cardamom and bayleaves and sauté on a medium flame for a few seconds.
  3. Add the onions, carrots, french beans, mushrooms, green peas, rice and salt, mix well and sauté on a medium flame for another minute.
  4. Add 3 cups of hot water, mix well and cook on a slow flame for 15 to 20 minutes or till the rice gets cooked and the water has evaporated. Serve hot.
