A great tasting flavourful vegetable soup, tomato and spinach soup has chopped tomatoes and spinach puree as main ingredients. The tangy and yummy soup is an excellent winter soup laden with nutrients and fiber.

Ingredients


For The Tomato Soup
400 gms tomatoes , roughly chopped
50 gms garlic (lehsun)
50 gms onions , chopped
1 carrot , chopped
1 bayleaf (tejpatta)
3 to 4 peppercorns (kalimirch)
5 gms celery (ajmoda) stalks
3 tsp cornflour , dissolved in 3 tbsp
10 gms leek
50 ml fresh cream
100 ml vegetable stock

For The Chilli Spinach Soup
200 gms spinach (palak) puree
100 ml vegetable stock
30 gms garlic (lehsun)
50 gms onions , chopped
2 green chillies , chopped

Other Ingredients
50 gms whipped cream for garnishing

Method
For the tomato soup

  1. Heat the oil in a deep pan, add the bayleaf , garlic and peppercorns and saute till garlic turns golden brown in colour.
  2. Add the potatoes, onions, carrots. Leek and celery and mix well. Cook for 5 min.
  3. Add the tomatoes and cook till tomatoes are mashed.
  4. Add salt , pepper and the vegetable stock, mix well and bring the soup to boil. Keep aside.

For the chilli spinach soup

  1. Heat the oil in a pan, add the onions and garlic and saute for few seconds.
  2. Add the green chillies and saute for few more minutes.
  3. Add the spinach puree, mix well and cook for 5-10 min.
  4. Add cream and mix well.

How to serve

  1. In a soup bowl, pour both the soups simultaneously, pipe whipped cream on top and serve hot.
