Genovese is one of the great sauces of Italy. The city of Genoa in Italy takes the credit of creating this sauce which uses the famous "pesto" (also originated in Genoa). This sauce is traditionally served with pasta. The addition of mushrooms enhances the taste of this already flavourful sauce. Pesto can be easily made at home - by pounding basil, garlic, walnuts and olive oil or you can buy ready-made pesto, available at speciality gourmet stores.

Ingredients


3 cups cooked fettuccine

For the sauce
1 recipe Pesto
1 onion, sliced
1 1/2 cups mushrooms (khumbh), sliced
1 cup milk
4 tbsp fresh cream
1/2 cup grated processed cheese
3 tbsp butter
salt and black pepper (kalimirch) powder to taste

Method
  1. Heat the butter in a pan and sauté the onion slices till they are translucent.
  2. Add the mushrooms and salt and sauté for 3 to 4 minutes.
  3. Add the pesto, milk and cream and mix well. Bring to a boil while stirring continuously.
  4. Toss in the pasta, pepper and cheese and serve immediately.

Tips
  1. You can add your favourite vegetables like carrots, broccoli, french beans etc. to this dish. Just parboil them before you add them.

Love Fettuccine with Pesto. Remove the cream and cut the cheese to make it an extremely healthy pasta meal. I use it as a carbo loading before my long runs on Sunday morning. Come Saturday night, its pasta time.

Fettuccine gets coated very well with Pesto sauce. Mushrooms give some good veggies to the pasta. I used milk instead of cream and very little grated cheese to make a healthy pasta meal.
