Tastes, textures and colours mingle in a deep bowl of this wholesome soup which has plenty of soft chunks of vegetables. Fresh ginger and garlic add pungent accents to the naturally sweet vegetable flavours in it.
- Bring 4 cups of water to a boil in a pan and add the ginger and garlic to it.
- Add the pumpkin, corn, spring onions and carrot and simmer till the vegetables are nearly cooked.
- Add the mushrooms, spinach, paneer, butter and salt and simmer for 4 to 5 minutes.
- Serve hot with soya sauce, lemon juice and pepper.
