Tastes, textures and colours mingle in a deep bowl of this wholesome soup which has plenty of soft chunks of vegetables. Fresh ginger and garlic add pungent accents to the naturally sweet vegetable flavours in it.

Ingredients

Method
  1. Bring 4 cups of water to a boil in a pan and add the ginger and garlic to it.
  2. Add the pumpkin, corn, spring onions and carrot and simmer till the vegetables are nearly cooked.
  3. Add the mushrooms, spinach, paneer, butter and salt and simmer for 4 to 5 minutes.
  4. Serve hot with soya sauce, lemon juice and pepper.
