Lettuce and Apple Salad with Lemon Dressing ( Healthy Salads Recipe)

Iron rich lettuce and celery teamed with crunchy apples to raise your haemoglobin levels. Being laced with a vitamin Crich lemondressing it helps to enhance the absorption of iron further.

Preparation Time:     Makes 3 servings

Ingredients

1 1/2 cups iceberg lettuce leaves , torn into pieces
2 cups apple cubes (unpeeled)
1/4 cup finely chopped celery (ajmoda)

To Be Mixed Together Into A Lemon Dressing
2 tsp lemon juice
1/2 tsp lemon zest
1/2 cup low-fat curds (dahi) , whisked
2 tbsp roughly chopped basil
2 tbsp grated apple
salt and to taste

For The Topping
1/2 cup corn flakes

Method
  1. Combine all the ingredients for the salad in a bowl and mix well.
  2. Refrigerate for at least 2 hours.
  3. Just before serving, add thelemon dressing and toss well.
  4. Serve immediately topped with cornflakes.

Love the lemon low fat dressing which goes well with Apple and lettuce. Celery adds a good crunch to the salad.
