Ingredients


For The Rice
1 1/2 cups uncooked rice (chawal)
3 tbsp oil
salt to taste

Other Ingredients
1/2 cup capsicum (green , red and yellow) , cut into strips
4 whole dry red chillies
1/4 cup blanched broccoli florets
1/4 cup tomato sauce
1/2 cup grated vegetarian cheese
2 tsp dried oregano
2 tbsp oil
salt and to taste

Method
For the rice

  1. Wash and soak the rice for 30 minutes. Drain.
  2. Heat the oil in a pan, add the rice and sauté till it is pink in colour.
  3. Add 3 cups of hot water and salt and cook on a medium flame till the rice is done. Each grain of rice should be separate. Keep aside.

How to proceed

  1. Roast the chillies in a frying pan for a few seconds. Remove from the frying pan and pound in a mortar and pestle to a coarse powder. Keep aside.
  2. Heat the oil in a pan, add the capsicum and fry lightly for half a minute.
  3. Add the pounded chillies and fry for a few more seconds.
  4. Add the rice, broccoli, tomato sauce, cheese, salt and pepper and mix well.
  5. Serve hot.
