To Be Mixed and Kneaded Into A Sofy Dough:
1 cup whole wheat flour (gehun ka atta)
1/2 cup plain flour (maida)
salt to taste
water as required
2 tbsp oil

For The Stuffing:
1/2 cup grated carrot
1/2 cup grated cabbage
salt to taste
1 tsp chilli paste
a pinch of sugar
1 tsp lemon juice
1/4 tsp red chilli powder
2 tsp oil

Other Ingredients
whole wheat flour (gehun ka atta) for rolling
oil for cooking

For the stuffing:

  1. Heat 2 tsp of oil in a pan, add the chilli paste and saute on a medium flame for a second.
  2. Add the carrots and cabbage, mix well and saute on a medium flame till the vegetables are cooked.
  3. Add the salt,sugar,lemon juice and red chilli powder and mix well.
  4. Remove form the flame, cool slightly and divide the stuffing into equal portions and keep aside.

How to proceed

  1. Divide the dough into equal portions and keep aside.
  2. Roll out each portion into a 3" diameter roti and place a portion of the stuffing at the center of it.
  3. Bring the corners together and seal tightly and roll again to make a roti of medium thickness of 5" diameter.
  4. Heat a non-stick tava and cook the paratha using oil till it turns golden brown in color from both the sides.
  5. Serve hot with khatu athanu.
