Mixed Vegetable Paratha, also known as Vegetable Paratha or Sabzi Paratha, is a hearty and delightful staple from North India. This wholesome breakfast option is so flavorful that it often doesn't even require a side dish, though it pairs wonderfully with fresh curd. It's a fantastic way to utilize various vegetables you might have in your refrigerator, transforming them into a delicious and filling meal that can be enjoyed any time of day.

 

Crafting these flavorful parathas involves two main components: the soft outer roti and the vibrant mixed vegetable stuffing. For the roti, you'll need 1/2 cup whole wheat flour (gehun ka atta), 1/2 cup plain flour (maida), 2 tbsp milk, salt to taste, and 1 tsp melted ghee. The use of both flours contributes to a balanced texture. The stuffing is where the paratha truly shines, featuring 1 1/2 cups chopped and boiled mixed vegetables (like carrots, French beans, green peas), 2 tbsp oil, 1/2 cup finely chopped onion, 3/4 cup boiled, peeled and mashed potatoes, 2 tbsp finely chopped coriander (dhania), 2 tsp finely chopped green chillies, 1/2 tsp chilli powder, 2 pinches garam masala, and salt to taste.

 

The preparation of the roti dough is crucial for a soft paratha. Begin by combining the whole wheat flour, plain flour, milk, salt, and melted ghee in a deep bowl. Knead these ingredients into a semi-soft doughusing just enough water. Once kneaded, cover the dough and set it aside for at least 10 to 15 minutes to rest. This resting period allows the gluten to relax, making the dough more pliable and easier to roll. After resting, divide the dough into 5 equal portions and roll out each portion into a 175 mm (7”) diameter circle using a little whole wheat flour for dusting. Each roti is then lightly cooked on a hot tava (griddle) and kept aside, covered with a muslin cloth.

 

Next, prepare the flavorful stuffing. Heat the oil in a broad non-stick pan, add the finely chopped onions, and sauté them on a medium flame for 1 to 2 minutes until they turn translucent. Then, add the chopped and boiled mixed vegetables and boiled and mashed potatoes, mixing well. Cook this mixture on a medium flame for 1 to 2 minutes, stirring occasionally. This step ensures the vegetables are well combined and slightly heated through.

 

To enhance the taste of the stuffing, add the remaining spices and herbs: finely chopped coriander, finely chopped green chillies, chilli powder, garam masala, and salt. Mix all ingredients thoroughly and cook on a medium flame for another minute, allowing the flavors to meld beautifully. Once done, remove the stuffing from the flame and set it aside to cool for a while. After it has cooled, divide the stuffing into 5 equal portions, preparing them for the paratha assembly.

 

Finally, it's time to assemble and cook the Mixed Vegetable Parathas. Take one lightly cooked roti, place it on a flat, dry surface, and spread a portion of the prepared stuffing evenly over one half of the roti. Carefully fold the other half of the roti over the stuffing to form a semi-circle, gently pressing the edges to seal. Heat a non-stick tava (griddle) and cook each paratha using a little oil until golden brown spots appear on both sides, ensuring they are cooked through and crispy. Repeat this process for the remaining parathas. Serve these wholesome Mixed Vegetable Parathas immediately with fresh curd (dahi) for a truly satisfying and tasty meal.

Method

For the roti
 

  1. Combine all the ingredients in a deep bowl and knead into a semi-soft dough, using enough water. Cover and keep aside for at least 10 to 15 minutes.
  2. Divide the dough into 5 equal portions and roll out each portion of the dough into a 175 mm. (7”) diameter circle using a little wheat flour.
  3. Cook each roti very lightly on a hot tava (griddle).
  4. Cover them with a muslin cloth and keep aside.


For the stuffing
 

  1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes or till the onions turn translucent.
  2. Add the mixed vegetables and potatoes, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  3. Add the coriander, green chillies, chilli powder, garam masala and salt, mix well and cook on a medium flame for another minute.
  4. Remove from the flame and keep aside to cool for a while.
  5. Divide the stuffing into 5 equal portions and keep aside.


How to proceed
 

  1. Place a roti on a flat, dry surface, spread a portion of the stuffing on half of the roti and fold it over to make a semi-circle.
  2. Heat a non-stick tava (griddle) and cook each paratha, using a little oil, till golden brown spots appear on both the sides.
  3. Repeat steps 1 and 2 to make 4 more parathas.
  4. Serve immediately with fresh curds.

I tried this. Method of making this is different. My kids don''t eat vegetables, i stuff them in this method and give them to eat. get the necessary nutrition from this. the crunch from vegetables gives a nice mouth feel as well.
