Kasabendi is an interesting regional recipe of putting cucumbers,carrots,peas in a cloth sealed open mouthed container along with garlic, hing and salt in sunlight. The mixture is taken out and then mixed with oil, chillies and relished with roti or rice at night.

2 cucumbers
2 carrots
1 small bowl green peas
6 cloves garlic (lehsun)
1 small bowl peanuts
salt to taste
2 pinches asafoetida (hing)
2 to 3 tsp oil
3 tsp black sesame (til) powder
2 tsp cumin seeds (jeera) powder

  1. Cut cucumber and carrot( long ones).
  2. Add green peas and groundnut to it.
  3. Add asafoetida, water and salt to it, mix it well.
  4. Tie the top of the container with a thin muslin cloth and keep it in sunlight for the full day.
  5. At night mix it and put oil, black til power, garlic and jeera powder into it.
  6. Have it with rotis.
