For foxtail millet paratha
 

  1. To make foxtail millet paratha, in a mixer jar, add the foxtail millet and blend into a fine powder.

  2. In a deep bowl, sieve the millet flour then add wheat flour, besan, jowar, spinach, sesame seeds, flaxseeds, ginger garlic paste, green chilli paste, turmeric powder, chilli powder, coriander cumin seeds powder and salt.

  3. Mix well and knead into a soft dough using ½ cup water. Divide the dough into 10 equal portions.

  4. Roll out each portion into a circle of 175 mm (7") diameter, using a little whole wheat flour for rolling.

  5. Heat a non-stick tava (griddle) and cook each roti, using ¼ tsp of oil, till it turns golden brown in colour from both the sides.

  6. Serve foxtail millet paratha immediately.
